I had a fantastic time with my family last weekend. They made a pit stop over in LA before they headed off to Hawaii to visit me. We headed to San Diego to enjoy the scenery and of course, the food. My family is visiting me this weekend from New York! Chilaquiles Inspired (aka Ghetto Chilaquiles)

Hello Ladies and Gents! I ran out of groceries the other day and had a slight panic attack when I glanced in my nearly empty fridge. I spotted half a pack of grated cheddar cheese (extra sharp, yum) and mild salsa sauce. I suddenly thought of the delicious authentic home-made chilaquiles my boyfriend's mom made for breakfast once. Because of my Buddhist faith, I am a vegetarian on 'special' days. Some of these days, for example, celebrate the Buddha's birthdays or are special prayer days.  I admit that I love to eat meat. I rarely eat beef, but I eat chicken, pork, or fish on a daily basis.  So on those 'special' vegetarian days, I'm eating constantly throughout the day because I never feel full. Chicken Pot Pie

I love chicken pot pie. I remember going straight to the freezer after school and baking the frozen pot pies my mom bought for me from Costco.  Eventually I branched out and tried other pot pies from various restaurants and bakeries.  My absolute favorite part of the pie is probably the crust...yum! And come to think of it, I'm pretty picky about the texture of the chicken in the filling.
